RED SNAPPER WITH JALAPENO TARTAR SAUCE

Ingredients
• 1/4 cup fat-free mayonnaise
• 2 scallions, thinly sliced
• 1 Jalapeno pepper, seeded and minced (wear gloves to prevent irritation)
• 2 tablespoons chopped fresh cilantro
• 1 tablespoon fresh lime juice
• 1/4 teaspoon + 1 tablespoon fajita seasoning
• 4 (6-ounce) red snapper fillets
• 2 teaspoons canola oil


Directions
1.
To make the tartar sauce, combine the mayonnaise, scallions, Jalapeno, cilantro, lime juice, and 'A teaspoon of the fajita seasoning in a serving bowl; set aside.

2. Sprinkle both sides of the snapper fillets with the remaining 1 tablespoon fajita seasoning. Heat the oil in a large nonstick skillet set over medium-high heat. Add the fish and cook until browned and just opaque in the center, about 3 minutes on each side. Serve with the tartar sauce.

Try It: Make use of versatile fajita seasoning to punch up the flavor of other foods, including chicken breasts, pork chops, and shrimp.

Nutrition Per Serving (1 fillet and 2 tablespoons tartar sauce): 204 Cal, 5 g Fat, 1 g Sat Fat, 0 g Trans Fat, 62 mg Chol, 357 mg Sod, 4 g Carb, 1 g Fib, 34 g Prot, 57 mg Calc.
