MOREL MUSHROOMS AND TOMATO SAUCE

Preparation time: 30 minutes
Number of servings: 8
Number of 5 A Day servings: 1

Ingredients
2  cups hot red wine 
2  Tbsp olive oil 
2  Tbsp onion, finely chopped 
3  cups tomatoes, chopped 
1/4  cup fresh basil, chopped 
3/4  oz dehydrated morels, sliced 
1  Tbsp unsalted butter 
2  Tbsp garlic, minced 
3  cup white mushrooms, chopped 
1/4  cup fresh Italian parsley, chopped 
1  lb penne pasta 
1/2  tsp salt 
1/8  tsp black pepper 
 
 
Directions
Soak morels in hot wine, set aside.

In a large skillet, sauté the onion and garlic in the oil and butter.

Add white mushrooms and cook for 5 more minutes.

Add wine, morels, tomatoes, Italian parsley, basil, salt and pepper.

Cook for 5 minutes more.

Boil penne until tender. Drain and serve with sauce.
