KING MACKEREL STEAKS, BROILED WITH TANGY GLAZE

Yield: 6 servings.


Ingredients

2 pounds Florida king mackerel steaks*
1/3 cup vegetable oil
1/3 cup ketchup
1/3 cup frozen lemonade concentrate, thawed
1 tablespoon prepared mustard
1/2 teaspoon salt
1/2 teaspoon garlic salt
1 large bay leaf, crumbled


Directions

Place fish steaks in a single layer in a baking dish.
Combine remaining ingredients; mix well.

Reserve 1/8 cup of marinade for basting; set aside.

Pour remaining marinade over steaks; turn to coat evenly. Cover and marinate in refrigerator for 30 minutes.

Remove steaks from marinade. Discard marinade.

Place steaks on a lightly-oiled broiler pan. Baste with reserved marinade.

Broil about 4 inches from source of heat for 5 to 6 minutes. Turn carefully and baste with marinade.

Broil 5 to 6 additional minutes or until fish flakes easily when tested.

* Seafood alternatives: Spanish mackerel, bluefish, pompano
