INDONESIAN PORK STIR-FRY

Serves 4.

• 1 pound boneless pork loin, cut into stir-fry strips
• 1 teaspoon vegetable oil
• 1/2 teaspoon crushed red pepper
• 1 teaspoon shredded fresh ginger OR 1/2 teaspoon ground ginger
• 1 3-ounce package pork-flavored oriental noodles
• 1/4 cup peanut butter
• 2 tablespoons soy sauce
• 2 cups shredded cabbage & carrots
• 1/4 cup sliced green onions
 

Cooking Directions
Heat oil in a large nonstick frypan; add pork, red pepper and ginger.

Cook and stir until pork is done, about 4-5 minutes.
Remove pork and keep warm.

Cook noodles as directed on package.

Drain and keep warm, reserving cooking water.

In small saucepan, blend peanut butter, 1/2 cup reserved cooking water and soy sauce together; heat and stir until hot, adding more cooking water if needed.
Toss cooked pork, noodles, cabbage, carrots and green onions with peanut sauce.

Serve immediately.

Serving Suggestions
Indonesian food reflects Indian, Thai and Asian influnces. Serve with Cool Cucumber Salad, warm tortillas and baked custard.
