CHILLED AVOCADO GAZPACHO
Serves 4.
Ingredients • 5 small avocados, peeled and chopped • 1 jalapeno, seeded and minced • 1 pinch crushed red pepper flakes • 1/3 cup fresh lime juice • 3 cups chicken broth • 1 cup half-and-half or cream • 1/4 teaspoon salt • 1/2 teaspoon pepper • 1-1/2 tablespoons fresh cilantro, chopped
Directions Combine first 3 ingredients, 3 tablespoons of lime juice, and 1 cup of broth in a food processor.
Process until smooth.
Transfer the mixture to a large bowl and whisk in the remaining 2 cups of broth, cream, salt, pepper, and cilantro.
Chill.
Serve garnished with shrimp and/or avocado slices.
