SHARP CHEDDAR GRITS CASSEROLE

Makes 8 servings

Ingredients
• 4 cups water
• 1 teaspoon salt
• 1 cup quick-cooking grits
• 1 cup grated Cabot Cheddar
• 4 tablespoons Cabot Salted Butter
• 2 large eggs, lightly beaten


Directions
1.
Preheat oven to 350ºF.

2. In large saucepan, bring water and salt to boil. Gradually stir in grits. Simmer uncovered, stirring occasionally, for 5 minutes.

3. Remove from heat and stir in remaining ingredients. Pour into ungreased 1 1/2-quart casserole.

4. Bake for 45 to 55 minutes.

(Grits can be prepared in advance through step 3; cover and refrigerate until ready to bake.)
