SHARK, ORANGE BAKED

Yield: 4 servings.

1 1/2 pounds Florida shark fillets
1/3 cup vegetable oil
3 1/2 tablespoons Florida orange juice
4 teaspoons grated Florida orange peel
1 1/4 cups finely crushed bacon-flavored crackers
1 teaspoon paprika
1/2 teaspoon seasoned salt
Florida orange slices (garnish)
 
 
Cut fish into serving-size portions.

Combine oil, juice, and orange peel.

In a separate dish, mix crackers, paprika, and salt.

Dip fish in oil mixture and roll in cracker mixture.

Place fish, single layer, in lightly-oiled, 1 1/2-quart shallow baking dish.

Pour remaining oil mixture over fish.

Bake at 450 degrees F for 10-12 minutes or until fish flakes easily with a fork.

Garnish with orange slices.


Per serving: calories 440, calories from fat 170, total fat 19g, saturated fat 3g, cholesterol 60mg, total carbohydrate 24g, protein 36g.
