FILLET OF SOLE IN GALLIANO BUTTER

Old Farmer's Almanac Everyday Cookbook

Makes 6 servings.


Ingredients

• 2 pounds sole fillets
• 2/3 cup butter
• 2/3 cup whole or slivered blanched almonds
• 1/4 cup Liquore Galliano
• 1/4 cup fresh lemon juice
• 1/4 cup chopped fresh parsley
• salt and pepper, to taste


Directions

Rinse the fillets and pat dry with paper towels.

Cut into six portions and set aside.

In a large skillet, melt the butter.

Add the almonds and saute until lightly toasted.

Allow the butter to brown, then stir in the Galliano, lemon juice, parsley, salt, and pepper.

Add the fillets.

Cover and cook over medium heat for 7 to 10 minutes, or until the fish flakes easily, basting the fish with Galliano butter frequently.
