OVEN-FRIED CATFISH

Fix-it And Enjoy-it Cookbook

Makes 4 servings
Prep Time: 15 minutes
Baking Time: 25-30 minutes


Ingredients
• 4 catfish fillets (6 ozs. each)
• 1 cup cornflake crumbs
• 1/4 tsp. celery salt
• 1/2 tsp. onion powder
• 1/4 tsp. paprika
• 1/8 tsp. pepper
• 1 egg white
• 2 Tbsp. milk


Directions
1.
Pat fish dry with paper towels. Set aside.

2. In glass pie plate, combine crumbs, celery salt, onion powder, paprika, and pepper.

3. In a shallow bowl, beat egg white. Add milk.

4. Dip fillets in egg white mixture, then dip into crumb mixture, coating well.

5. Place in greased 9 x 13 baking dish.

6. Bake, uncovered, at 350° for 25-30 minutes, or until fish flakes easily with a fork.
