EMU CAKE AND CREAM CHEESE FROSTING
Emu Takes The Cake! Turn a simple dinner party into a memorable event by making the dessert the surprise element of the evening. Sound difficult? Not if that dessert happens to be emu cake with cream cheese frosting. Before raising a skeptical eyebrow, remember that guests come in two distinct categories – adventuresome and not adventuresome. Some will try anything once. Others play their food choices close to the vest. The cautious party-giver may tend toward tried-and-true cuisine and risk yet another ho-hum menu. The host with a flair for the dramatic, on the other hand, may debut emu cake and surprise guests by revealing the ingredients…only after they've tried their first bite and nodded their enthusiastic approval. Want something different, daring or just plain tasty? Here's the recipe:
EMU CAKE AND CREAM CHEESE FROSTING
1 lb. ground emu 1/3 teaspoon salt 3 cups brown sugar 2 cups flour 1 teaspoon cinnamon 1/2 teaspoon ground cloves 2 cups raisins 1 cup hot coffee 1/2 cup chopped nuts 1 teaspoon soda
Mix together meat, salt and brown sugar.
Add flour, cinnamon and cloves.
Mix together raisins, coffee, nuts and soda.
Add to meat mixture. Mix well.
Bake in a greased 9 x 13 baking pan 350 degrees for 45-50 minutes.
To make frosting: Soften one stick of butter. Mix with three-ounce package of cream cheese, one box 10-x sugar and one teaspoon vanilla. Spread generously over cooled cake.
