BROILED ROCK SHRIMP
Yield: 6 servings 2 1/2 pounds Florida rock shrimp, split and deveined 1/2 cup margarine, melted 3/4 teaspoon salt 1/4 teaspoon white pepper 1/4 teaspoon paprika Lemon Butter Sauce (see recipe below)
Lemon Butter Sauce
Yield: approximately 1/2 cup
1/2 cup butter, melted 2 tablespoons Florida Lemon juice combine margarine and lemon juice; heat thoroughly.
Lay rock shrimp flat on a broiler pan with meat exposed.
Baste with margarine; sprinkle with salt, white pepper and paprika.
Broil 4 inches from source of heat for 2 minutes or until meat is opaque.
Serve with Lemon Butter Sauce.
