VEGETABLES

QUICK WAY TO HULL CORN FOR HOMINY
 
 
 Take 1 quart of shelled corn, 1 quart of strong lye, made of wood ashes, the stronger the better; let the lye come to a boil, put in the corn, let it boil 20 or 30 minutes, according to the strength of the lye; stir 1/3 of the time quite hard, with a knife; turn the corn into a colander; put it back in the kettle and boil and stir, draining off the water 3 times; then fill the kettle with water and let it cook all day. If done properly, you will have some very nice hulled sweet corn with a little labor.
