GREEN BEANS (2 recipes) Green Beans #1 For 2 quarts of green beans, put 1/2 cup of butter and lard into a kettle: when very hot, add 1 tablespoonful, of flour. Brown well, then add 1 cup of water, and then the beans. Stir well, cover with water, and when tender, cook dry.

Green Beans #2 Prepare the beans for cooking, scald them in boiling water, let them remain in the water until it becomes lukewarm; then put them on to cook with meat. Add salt and a little sugar.
