Servings: 6; serving size: 3 Cups
Ingredients
• 1 lb. 4 oz. (approx. 4 1/2 c) White Pekin duckling, cooked & sliced 
• 1/4 C Olive oil 
• 4 C Onions, chopped 
• 2 T Garlic, minced 
• 1/2 C Cooked bacon, chopped 
• 4 1/2 C Tomatoes, drained & chopped 
• 1/2 C Sliced black olives, drained 
• 1 1/2 C Dry red wine 
• 1 t Salt 
• 3/4 t Black pepper 
• 3 quarts (12 c) Penne or ziti pasta, cooked 
• 1/2 C Parmesan cheese 
Directions
1) Heat oil over medium heat; add onions. Cook for 5 minutes, stirring occasionally. 
2) Stir in garlic, bacon, and White Pekin duckling. Cook for 5 minutes. 
3) Add tomatoes, olives, wine, salt, and pepper. Simmer for 25-30 minutes, stirring occasionally. 
4) Toss with pasta. 
5) Garnish with Parmesan cheese. Serve immediately.
