Kosher recipes do not use pork or shellfish, or mix milk and meat products, a Jewish dietary prohibition. Nonkosher cooks can simply substitute with their favorite ingredients. Many of the recipes offer contemporary versions that reflect dietary trends with nondairy, vegetarian and trimmed down ingredients.
