Barley Cabbage Soup

Makes: 8 Servings
Prep Time: 18 Minutes
Cooking Time: 6-12 Hours
Ideal Slow Cooker Size: 3½-4-Quart


~ ¼ cup dry pearl barley
~ 6 cups fat-free, low-sodium meat or vegetable broth
~ 1 cup chopped onions
~ 3-4 cups finely chopped green cabbage
~ ¼ cup chopped fresh parsley
~ ½ top. celery salt
~ ½ tsp.salt
~ 1/8 tsp. black pepper
~ 1 Tbsp. minute tapioca


1. Combine all ingredients in slow cooker.

2. Cover. Cook on Low 10-12 hours, or on High 5-6 hours.

Per Serving: 60 calories (0 calories from fat), 0g total fat (0g saturated, 0g trans), 0mg cholesterol, 300mg sodium, 10g total carbohydrate (2g fiber, 2g sugar), 5g protein, 0% DV vitamin A, 10% DV vitamin C, 2% DV calcium, 4% DV Iron.
