HOT BLUE RIFFS

Florida Soft-Shell Blue Crabs

Yield:
6 servings

12 medium Florida soft-shell blue crabs

2 fresh Florida eggs, beaten
1/4 cup Florida milk
1 teaspoon salt

3/4 cup all-purpose flour
3/4 cup dry bread crumbs

vegetable oil


Rinse crabs under cold running water. Pat dry with paper towels.

In small bowl or pie plate, combine eggs, milk, and salt.

In a separate pie plate, combine flour and crumbs.

Dip crabs in egg mixture and roll in flour mixture.

Pan Fried: Place crabs in a heavy skillet which contains about 1/8 inch of oil, hot but not smoking.
Fry at moderate heat.
When crabs are brown on one side, turn carefully and brown the other side.
Cooking time approximately 8 - 10 minutes.
Drain on absorbent paper.

Deep Fried: Place crabs in a single layer in fry basket and cook in deep, hot oil at 375 degrees for 4 minutes or until brown.
Drain on absorbent paper.


One serving (140 grams) contains: Calories: 270, Calories from Fat: 130, Total fat: 14g, Saturated Fat: 2g, Cholesterol: 150mg, Sodium: 770mg, Total Carbohydrate: 21g, Dietary Fiber: 2g, sugars: 3g, Protein: 15g, Vitamin A: 4%DV, Vitamin C: 0%DV, Calcium: 40%DV, Iron: 20% DV. (%DV means percentage of Daily Value)
