Hi, I hope everyone had a very good Easter weekend. It's been very busy down here in Key West, but I was able to get a lot done on getting ready to move the website to the new server. ANCIENT AND CLASSIC RECIPES
TOMATO FRITTERS (Fannie Farmer Boston Cooking School Cook Book 1896 edition)

1 can Tomatoes
6 Cloves
1/4 cup Sugar
3 slices Onion

1 teaspoon Salt
A few grains Cayenne Pepper
1/4 cup Butter
1/3 cup Corn Starch
1 Egg

Cook first four ingredients twenty minutes, rub all through a sieve except seeds, and season with salt and pepper.
Melt Butter, and when bubbling, add Corn Starch and Tomato gradually; cook 2 minutes, then add Egg slightly beaten.
Pour into a buttered shallow tin and cool.
Turn on a board, cut into squares, diamonds, or strips.
Roll in Crumbs, eggs, and crumbs again, fry in deep fat, drain.

12 PM - The Raising of the Colors at Fort Taylor...Complete with firing of the Civil War Cannons...the Fort becomes ours!
7 PM - The Conch Republic Naval Parade and Great Battle for the Conch Republic...Sponsored by the Flagship Schooner WOLF this is THE event of the Celebration...there is nothing like it in the known universe.

10 AM - 5 PM~- The Conch Republic Crafts Show and Food Fest Sponsored by the Cultural Preservation Society...On Greene Street between Duval and Whitehead Streets. The arts, crafts, and foods of the Conch Republic.
Noon - 5 PM - The Tenth Annual Lower Duval Crawl...The bars of old town howl all afternoon.
1 PM - The Seventh Second Annual Conch Republic Pedicab Downhill Invitational...For the seventh year this madcap race run in traffic will feature degrees of difficulty unparalleled in Conch Republic History. A benefit for the Conch Republic Foster Children's Fund.
4 PM - The 18th Annual Conch Republic Red Ribbon Bed Race...Our oldest and most famous event...beds race down Duval ...the most fun you can have in bed with your clothes on!
6 - 11 PM The Great Conch Republic Chili Cook Off to Benefit the Monroe County School Board American Cancer Society Relay for Life Team...the 200 Block of Duval Street will howl all night long with great live music, and fabulous chili.

Oriental Chicken And Pasta Salad

Serving Size : 6

Amount Measure Ingredient -- Preparation Method

-----Dressing-----

1 1/4 cups Mayonnaise

1 TB Soy Sauce

1 teaspoon Fresh Grated Ginger

-----Salad-----

3/4 pound Cooked Chicken -- julienned
10 ounces Pasta -- Cooked
1/4+ pound Bean Sprouts
3 1/2 ounces Waterchestnuts -- sliced
2 TB Green Onions -- chopped

[1) Mix Dressing ingredients well.
[2) Add remaining ingredients and toss together.

Vegetable Hummus Sandwiches

Serving Size : 8

Amount Measure Ingredient -- Preparation Method

1/2 Cup Green Onion -- finely chopped
3 Tablespoons Parsley -- Chopped
1/2 Cup Green Pepper -- finely chopped
1 Tablespoon Sesame Seeds
1 Tablespoon Mayonnaise, Imitation, No Cholesterol
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Mint Leaves
1/2 Teaspoon Oregano
1/8 Tablespoon Red Pepper

2 Cups Garbanzo Beans, Canned

4 Each Pita Bread, Whole-Wheat
1 Medium Tomato -- sliced
1/2 Cup Monterey Jack Cheese -- shredded
2 Cups Alfalfa Sprouts

Combine Green Onions, Green Pepper, Parsley, Sesame Seeds, Mayonnaise, Oregano, Garlic Powder, Red Pepper & Mint leaves.

Cover With Plastic Wrap & Vent. Microwave At High for 3 Min.

Place This Mixture & Garbanzo Beans in Processor. Process 1 Min. OR Until Smooth.

Spoon About 1/4 Bean Mixture (Hummus) Into Each Pita Half; Top With 1 TB. Cheese. Cover With Paper Towels & Microwave At High For 1min. Cut Tomato Slices in Half. Open Sandwiches & Place 2 Tomato Slice Halves & 1/4 Cup Alfalfa Sprouts Into Each Sandwich Half.

Serve Immediately.

DID YOU KNOW
West Virginia motorists who run down the odd critter can legally take it home for dinner under a law passed in 1998 by the Legislature. The bill lets drivers keep their road kill provided they report it to conservation or police officers within 12 hours. The measure became law when Governor Cecil Underwood declined to veto it. Proponents said if drivers can be encouraged to eat their road kill, the state could save money it now pays state Division of Highways workers to remove the dead animals. (Boy, would this be a fun concept in Key West - a chicken in every pot!)
