SUNSHINE SNAPPER

Yield: 6 servings
 

INGREDIENTS

    • 2 pounds Florida snapper fillets
    • 1 tablespoon butter
    • 2 tablespoons Florida orange juice
    • 2 teaspoons grated Florida orange peel
    • 1 teaspoon salt
    • 1/8 teaspoon nutmeg
    • 1/8 teaspoon pepper
     

DIRECTIONS

Cut fish into 6 pieces; place in a single layer in a lightly-oiled baking dish.

Combine remaining ingredients; pour over fish.

Bake in a preheated 350 degrees F oven for 20-25 minutes or until fish flakes easily with a fork.

Calories 170, calories from fat 35, total fat 4g, saturated fat 1.5g, cholesterol 60mg, total carbohydrate 1g, protein 31g.
