OLD TIME MUSHROOM BARLEY SOUP

Ingredients 3 tablespoons olive oil 2 cups white button mushrooms, sliced 1/2 cup shiitake mushrooms, sliced 1 cup leeks, sliced 1/2 cup broccoli, diced, 1/2 cup onions, diced 3/4 cup barley, cooked 2 1/2 cups water 3 tablespoons fresh tarragon, chopped 3 teaspoons sea salt 1/2 teaspoon black pepper, freshly ground pinch cayenne pepper
Directions 1. In a large saucepan, heat oil and saute the mushrooms, leeks, broccoli, and onions for 3-5 minutes over medium-high heat.
2. Add barley, water, tarragon, salt, pepper, and cayenne, and cook, covered, over medium-low heat for 35 to 45 minutes.
3. Serve immediately.
