OLD TIME MUSHROOM BARLEY SOUP

Ingredients • 3 tablespoons olive oil • 2 cups white button mushrooms, sliced • 1/2 cup shiitake mushrooms, sliced • 1 cup leeks, sliced • 1/2 cup broccoli, diced, • 1/2 cup onions, diced • 3/4 cup barley, cooked • 2 1/2 cups water • 3 tablespoons fresh tarragon, chopped • 3 teaspoons sea salt • 1/2 teaspoon black pepper, freshly ground • pinch cayenne pepper
Directions 1. In a large saucepan, heat oil and saute the mushrooms, leeks, broccoli, and onions for 3-5 minutes over medium-high heat.
2. Add barley, water, tarragon, salt, pepper, and cayenne, and cook, covered, over medium-low heat for 35 to 45 minutes.
3. Serve immediately.
