CLAMS WITH ANGEL HAIR PASTA

Yield: 4 servings
 
2 tablespoons olive oil
1/2 pound cooked angel hair or spaghetti pasta
3/4 cup green onions, sliced
1 tablespoon Florida lime juice
2 teaspoons garlic, chopped
1/4 cup fresh chopped Florida cilantro
2 pounds Florida hard clams
1/2 teaspoon black pepper
1/2 cup tomatoes, chopped
1/2 cup white wine
salt to taste


Hear olive oil in a large skillet.

When hot, add greens onion and garlic.

Cook until onions are limp (2-3 minutes).

Add clams, tomatoes and wine.

Cover and cook until clams open 5-6 minutes, depending on size of clams.

Add pasta and remaining seasonings.

Serve hot.
