CALAMARI KOKINISTO
Greek cuisine is rich in delicious seafood from the Mediterranean. Squid is a stable on the Greek seafood table. Serves 4
Ingredients • 4 large calamari (tentacles and body), cleaned and sliced • 1 12-ounce can whole tomatoes, chopped • 1/4 cup extra virgin olive oil • 1 small onion, chopped fine • 3 garlic cloves, minced fine • 1-1/2 cups white wine • 1/4 teaspoon saffron threads • 2 tablespoons parsley, chopped • 1 tablespoon basil, chopped
Directions Blanch calamari in water for two minutes. Then remove and set aside.
In a sauté pan add olive oil and sauté onions and garlic until soften.
Then add tomatoes and white wine. Simmer.
After this simmers add calamari, saffron, parsley and basil. Toss for 2 minutes then serve hot.
