RECIPES FOR PIES

GREEN TOMATO PIE (3 recipes)
 
Green Tomato Pie #1

Peel and slice 9 pounds of green tomatoes, add 3 pounds of sugar and 1 sliced lemon; cook until soft. Put in glass cans and it will keep until wanted. Make pies with upper and lower crusts.

Green Tomato Pie #2
Slice green tomatoes very thin and put into a crust. Add 1 tablespoonful of vinegar, about 3 tablespoonfuls of sugar, a little flour, and spice to taste. Bake with 2 crusts.

Green Tomato Pie #3
Take 1 pint of green tomatoes pared and sliced; line a pie pan with pie paste and put in the tomatoes. Then sprinkle over them 5 tablespoonfuls of sugar, add 1 tablespoonful of vinegar, 1 teaspoonful of flour; season with allspice, cloves, and cinnamon. Put on top crust and bake in a moderately hot oven.
