GARUM

If you are trying out a old Roman recipe from Apicius and it calls for 'garum', substitute the Philippine 'baboong.'  Baboong is a fish paste that is very close to the Ancient Roman 'garum'. It is made from shrimp or fish that is salted and fermented for several weeks.
