SPAGHETTI WITH SPINACH & BLUE CHEESE

You can bust this out in less than fifteen minutes - and that includes waiting for the water to boil. But go for the glory and let them think you've been working your tail off all day.
Serves 6


Ingredients

• 1 pound spaghetti
• 4 ounces blue cheese, crumbled
• 4 tablespoons olive oil
• 3 cloves garlic, chopped fine
• 1/2 teaspoon red pepper flakes
• One 7-ounce bag "ready-to-go" fresh spinach leaves


Directions
Bring a large pot of water to a boil.

Add the spaghetti, and cook until still slightly firm (a minute or two less than what is specified on the package).

While the spaghetti cooks, put the blue cheese, olive oil, garlic, and pepper flakes in a bowl, mix well, and set aside.

When the spaghetti is done, add the spinach to boiling water with the spaghetti to cook for about 15 seconds.

Make sure it all gets submerged and mixed in well - it'll wilt really quickly.

Drain the spaghetti and spinach well and return to the pot.

Add the blue cheese stuff to the pot, mix well, then serve.
