CHIPPER RED SNAPPER

Yield: 6 servings
 
2 pounds skinless, boneless Florida red snapper fillets
1/2 cup Caesar salad dressing
1 cup potato chips, crushed
1/2 cup shredded sharp Cheddar cheese

 
Cut fillets into 6 portions.

Dip fish in salad dressing.

Place fillets in a single layer in a microwave-safe dish with thicker portions to the outside of dish.

Combine crushed chips and cheese; sprinkle over fillets

Cook in microwave on high for 8 to 10 minutes or until fish flakes easily when tested with a fork, rotate dish once during cooking.


Per serving: Calories 295, calories from fat 117, total fat 13g, saturated fat 3g, cholesterol 80mg, total carbohydrate 6g, protein 36g.
