OSTRICH SKEWERS

Serves 8 - 12 as an appetizer.


1 tablespoon vegetable oil
2/3 cup Florida sugar
1/3 cup soy sauce
1 small Florida onion
1 pound Florida ostrich or emu (fajita strips, or slices from round)

 
Combine first four ingredients in blender or food processor and puree.

Pour marinade ingredients over meat and marinate 2 hours or overnight.

Remove meat and reserve marinade; thread strips of meat on skewers.

Grill over medium heat or broil, basting occasionally with reserved marinade.
