OSTRICH PATTIES WITH MUSHROOM SAUCE

Serves 6 - 8
 
GROUND PATTIES
2 lbs. ground Florida ostrich
1/2 teaspoon grated nutmeg
2 cups fresh bread crumbs
3/4 cup Florida fat free yogurt
2 teaspoons salt
1 teaspoon black pepper
2 cups bread crumbs
2 Florida egg whites


Combine all ingredients for patties.

Shape into patties and bake in preheated 300 degree oven for 5-10 minutes depending on size of patties.

Serve with Mushroom Sauce.


MUSHROOM SAUCE
oil spray
1 pound Florida mushrooms, sliced
1 small Florida onion, chopped
2 tablespoons cider vinegar
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup Florida fat free yogurt

 
Heat medium sauce pot and spray with oil.

Add onions, stir over heat for 2 minutes, add mushrooms.

Cook until liquid from mushrooms has evaporated.

Add vinegar, salt and pepper and cook another 2 - 3 minutes.

Remove from heat and add yogurt and 1/4 cup capers if desired.

Do not bring to a boil as yogurt will separate.
