ONION PIE

 

Entertaining with Bluegrass Winners
(Lands End)
Serves 8


Ingredients

• 3/4 stick unsalted butter, melted
• 1 1/2 cups Club cracker crumbs
• 2 tablespoons butter, melted
• 2 cups sliced yellow onions
• 2 eggs, slightly beaten
• 3/4 cup whole or 2% milk
• 3/4 teaspoon each, salt and pepper
• 1/4 cup grated cheddar cheese
• Sprinkle of paprika


Directions

• Preheat oven to 350°F.

• Blend 3/4-stick warm melted butter and cracker crumbs. Press this "crust" in pie pan, making sure to press crust up sides of pan. Set aside.

• Saute onions in 2 tablespoons butter until limp. Put on top of crust.

• Combine eggs, milk, salt, and pepper and pour over onions. Cover with grated cheese and sprinkle with paprika.

• Bake uncovered at 350°F for 30 minutes or until brown. Makes a great side dish for grilled meat, chicken, or fish.
