MULLET BAKED IN CORAL SAUCE
Yield: 6 servings.
2 pounds Florida mullet fillets* 1/4 cup butter, melted 2 tablespoons lemon juice 1 teaspoon grated Florida onion 1 teaspoon paprika 1 teaspoon salt 1/8 teaspoon pepper
Place fillets in a single layer, in a lightly oiled baking dish.
Combine melted butter and remaining ingredients; mix well.
Pour sauce over fillets.
Bake at 350º F. 20 to 25 minutes or until fish flakes easily when tested.
