FISH ‘N’ CHIPS

Yield: 6 servings.

2 pounds skinless Florida mahi-mahi fillets*
1/4 cup lemon juice
2 tablespoons Italian salad dressing
2 cups crushed potato chips
1/2 cup grated Parmesan cheese
1/4 cup chopped Florida parsley
1 1/2 teaspoons paprika
1/2 teaspoon thyme
2 tablespoons vegetable oil


Cut fish into serving-size portions.

Combine lemon juice and salad dressing.

In a separate bowl combine potato chips, Parmesan cheese, parsley, paprika, and thyme.

Dip fish in lemon juice mixture and roll in potato chip mixture.

Place fish in a lightly-oiled baking dish and drizzle with oil.

Bake at 500 degrees F for 10-12 minutes or until fish flakes easily with a fork.

*Seafood alternatives: flounder, grouper, swordfish


Per serving: calories 610, calories from fat 330, total fat 37g, saturated fat 10g, cholesterol 85mg, total carbohydrate 42g, protein 29g.
