HOT BLUES, COOL REDS

Yield: 6 servings
 
Florida Soft-Shell Blue Crabs

2 tablespoons butter or margarine, melted
1 teaspoon salt
1 small Florida fresh onion, finely chopped
1/4 teaspoon pepper
2 tablespoons all-purpose flour
12 medium, fried Florida soft-shell blue crabs
1 14.5 oz can stewed tomatoes
chopped fresh Florida parsley

  
In a medium sauce pan, sauté onion in melted butter or margarine over low heat 2 to 3 minutes.

Stir flour into onion mixture until blended.

Add tomatoes, salt and pepper; cook until thickened, stirring constantly.

Arrange fried crabs on a platter (Hot Blue Riffs recipe).

Pour tomatoes over crabs and sprinkle with chopped parsley.

Serve immediately.

Note: Make tomato sauce first so crabs can be served immediately after frying.
