GINGERBREAD RECIPES

"The Settlement Cookbook" (1903 edition)
THE WAY TO A MAN'S HEART
Under the Auspices of "The Settlement"
(The Milwaukee Settlement House)


Gingerbread No. 1

1/2 cup sugar
3 tablespoons butter
1 egg
1 1/2 cups flour
1/8 teaspoon salt
1 tablespoon ginger
1 teaspoon cinnamon
1 teaspoon [baking] soda
1/2 cup milk or hot water
1/2 cup molasses

Mix butter and sugar to a soft, creamy paste;  add beaten egg. Mix spices, salt and soda with flour, and add a small portion. Add molasses and milk mixed to together, and flour alternately.  Bake thirty to forty-five minutes.

 
Gingerbread No. 2

2 eggs
1/2 cup sugar
1 cup molasses
1 cup of sour milk or cream
2 tablespoons melted butter or drippings
1/2 cup currants
1 teaspoon spices
1 teaspoon ginger
1 teaspoon of [baking] soda, a little salt
2 1/2 cups flour

Mix and bake in a moderate oven.
