COUSCOUS, BLACK BEAN AND SPINACH COUSCOUS
Start to Finish 10 minutes Makes 4 servings
Ingredients • 1 1/2 cups low-sodium chicken broth, Swanson® • 1 cup couscous, Near East® • 1 package (10-ounce) frozen chopped spinach, thawed, Birds Eye® • 3/4 cup black beans, drained, S&W® • 1 teaspoons lemon juice, ReaLemon® • Salt and pepper
Directions 1. In a medium saucepan over high heat, bring chicken broth to a boil. Remove from heat and stir in couscous. Cover and let sit for 5 minutes.
2. Squeeze excess water out of thawed spinach. In a microwave-safe bowl, combine spinach and black beans. Heat in microwave on HIGH for 2 minutes. Stir spinach and black bean mixture into couscous. Add lemon juice and season to taste with salt and pepper.
