RED RASPBERRY CORDIAL

A ruby-red liqueur to add warmth and color to the holidays - beautiful in champagne.
A Romantic Holiday Gift: A ruby-red bottle of red raspberry cordial packed in a beautiful basket or atop a shiny silver tray with a pair of cordial glasses, some chocolate raspberry truffles and a book of love poems is sure to catch someone’s attention. Tuck in a candle for that romantic evening you have in mind. Wrap with red cellophane and tie with a pretty ribbon.

Yield: Makes 3 pints



INGREDIENTS
3 cups sugar
1 fifth (3 cups) vodka
(2) 12 ounce bags or about 6 cups whole frozen raspberries


DIRECTIONS
Place sugar in a large wide mouthed jar. (If you don’t have a wide-mouth jar around the house, a well-washed plastic gallon milk jug and a funnel work very well.)

Warm vodka, pour over sugar and stir or shake until almost all is dissolved. (Any sugar remaining will dissolve over the next few days.)

Place frozen raspberries into jar/jug.

Cover loosely and allow to stand in a cool, dark place for about 3 weeks, stirring or shaking gently daily.

Strain cordial and funnel into gift bottles.

Serve alone or mixed with lemon-lime soda, seltzer or champagne.
