CHEESY RICE BITES

Yield: Makes 48 bars.

• 1 8-ounce package cream cheese, softened
• 3 ounces bleu cheese, crumbed (3/4 cup)
• 2/3 cup pitted ripe olives, divided
• 3 cups cooked rice
• 2 eggs, beaten
• 1/2 teaspoon salt
• 1/3 cup finely chopped walnuts
• 2 tablespoons chopped parsley

 
Blend cheeses.

Chop 1/3 cup olives; stir into cheese mixture.

Add rice, eggs and salt.

Spread into buttered 13x9-inch baking pan.

Top rice mixture with nuts, parsley and remaining 1/3 cup olives, sliced.

Bake at 350 degrees 20 minutes, or until set.
