CHEESE RICE SQUARES
Yield: Makes 25 squares.
• 1 1/2 cups cooked rice • 1/2 cup (2 ounces) shredded Cheddar cheese • 1/4 cup sliced green onions • 1/4 cup finely chopped ripe olives • 1/4 cup dry bread crumbs • 1/2 teaspoon Italian seasoning • 2 eggs, beaten • 1 teaspoon lemon juice • 1/8 teaspoon hot pepper sauce • Paprika for garnish (optional)
Combine rice, cheese, onions, olives, bread crumbs, seasoning, eggs, lemon juice and pepper sauce in large mixing bowl.
Press mixture into buttered 8x8-inch baking dish.
Sprinkle with paprika, if desired.
Bake at 375 degrees 10 to 15 minutes.
