ALE-POACHED HALIBUT

2  halibut fillets (6 to 8 ounces each)
Water
1  bottle (12-ounce) ale-style beer
2  teaspoons seafood seasoning. Old Bay®
1/2  lemon, juiced
1  teaspoon salt
10 whole peppercorns, McCormick®


1. Place the fish in poacher or a skillet with 4-inch sides. Add enough water to cover fish. Remove fish from water and set aside.

2. Add remaining ingredients to pan. Bring to boil.

3. Reduce heat to simmer. Return fish to pan and poach about 8 minutes per 1 -inch thickness of fish or until fish flakes easily when tested with a fork.
