POULTRY

PRESSED CHICKEN


Stew the chicken quite soft, also let it boil almost dry. When done, pick the meat off the bones in rather small pieces. Put back in liquid ; season to taste with salt and pepper. Pour all in a mold, under press, in a cool place. Eat cold.
