Take 1 or 2 kidneys (the amount must depend on the size of the family), chip them up into small pieces, being careful to take out all the insides, soak in salt water a few hours or over night if suitable; drain off salt water, wash well, cook until tender, add a lump of butter, pepper and salt if needed, and a little flour dressing made the same as for chicken.
