MACARONI AND CHEESE DISHES

CHEESE ENTREE

Place over the fire in a saucepan 2 tablespoonfuls of butter, when it is hot add a heaping tablespoonful of flour and stir until smooth, then add 1/2 cup of cream or milk, salt and pepper to taste. Beat light the yolks of 3 eggs, add them with a cupful of grated cheese, remove from the fire, put in a cool place; when cold, add the whites of the eggs beaten to a stiff froth, pour into a buttered dish and bake 20 minutes, taking immediately from the stove to the table.
