FISH, OYSTERS AND GAME

BAKED FISH WITH TOMATOES RECIPE

Select large white fish, clean and cut in pieces suitable for serving, season well with salt and pepper. Melt a little butter or lard in a dripping pan, cover with cracker crumbs, then lay the fish in, cover with more cracker crumbs, but not too thick; put a few small pieces of butter on top, then pour over the whole enough canned tomatoes to moisten the cracker crumbs. Bake 1 hour.
