Serbian Salad

Going over to my Grandparents house meant good food growing up.  The following recipe is a derivation of a fresh vegetable salad available in many cultures (whether regional or national).  Whatever you may call it, I call it delicious.   Please make it your own.

Omit/substitute/improvise where you feel it needs something that is not included. Don’t want tomatoes then toss them out and sub in some…………….well please don’t take out the tomatoes because they make the dish.  How about skipping the cukes?  Don’t do that one either because it really is a tomato and cucumber salad at its heart.  Green peppers!  Now that you can remove.  It will change the flavor dramatically but if you absolutely MUST ruin a supremely sublime dish then feel free to stab my Grandmother in the heart because you don’t like green peppers.

Oh heck.  Do what you want because it is now your dish.  Remember that food is not only universal, but individual.  You MUST enjoy it for it to be worthy to grace your table.  Take care of your family because remember that FOOD IS LOVE!
 

SERBIAN SALAD RECIPE

Dressing:
• 2/3 c. vegetable oil
• 1/3 c. red wine vinegar
• 3 garlic cloves, halved
• 1/2 tsp. salt
• 1/2 tsp. basil, crushed (or sub some dried)
• 1/4 tsp. each dried thyme, oregano, marjoram & pepper

Salad:
• 6 tomatoes, coarsely chopped
• 3 green peppers, coarsely chopped
• 3 green onions, chopped
• 1 cucumber, peeled, seeded & sliced
• 1 hot green pepper (optional)
• Crumbled feta cheese


Directions
Make dressing and refrigerate overnight. Combine tomatoes, peppers, onions and cucumber with dressing (discard garlic).

Top with feta cheese, green onion.
