Choney’s California Tacos

 Choney’s California Tacos is an easy meal for anyone who wants something quick and delicious. I have served this up in a pinch and everyone just loves them. There is no cooking involved.

First, you need a rotisserie chicken. I get mine from the local grocery. They’re usually packaged to-go and kept warm under heat lamps. The grocery near me has two different sizes: regular or colossal. Go colossal. Then you’re given the choice of flavor: plain, barbeque or lemon pepper. You’ll also need two avocados, shredded lettuce or spinach, tomatoes, grated Mexican cheese, chives, salsa and flour tortillas.

At home, you’ll first need to de-bone the chicken while it’s still warm, which makes the meat easy to pull from bone. I arrange the chicken nicely on a serving plate. Then I proceed with cutting and chopping.  For best appearance, I usually slice the avocados lengthwise. The other stuff can be cut or chopped.

Be sure and allow yourself 30 minutes of prep time. And be mindful that picking up your chicken as close to meal time as possible will provide maximum freshness, warmth, and flavor.  You’ll be amazed how much everyone will enjoy this.
